Scientist develops a way to eliminate ‘toxic’ element in wine

According to the Telegraph, a professor at the University of Illinois has found a way to eliminate the ‘toxic’ element in your favourite bottle that causes hangovers.

Professor Yong-Su Jin has developed a technique that alters the way yeast produces. Yeast is a vital part of the wine-making process. His team has discovered that if you change the DNA of yeast you can increase its nutritional elements, whilst reducing the toxic by-products that are known to facilitate hangovers.

“Genome knife” rids wine of hangover-inducing by-products

Jin recently explained: “Fermented foods such as beer, wine and bread are made with polyploid strains of yeast, which means they contain multiple copies of genes in the genome. Until now, it’s been very difficult to do genetic engineering in polyploid strains because if you altered a gene in one copy of the genome, an unaltered copy would correct the one that had been changed.”

Basically he and his team developed an enzyme known as a “genome knife.” Jin went on to suggest that the “knife” can slice through every copy of the gene and prevent the automatic corrections from happening, which prevents you from getting a hangover.

Yet the “knife” also has another purpose. It can be utilised to clone the enzyme that enhances malolactic fermentation. This is a fermentation process that determines the style and character of a bottle of wine. Jin commented that this can help eliminate hangovers as “improper malolactic fermentation generates the toxic by-products that may cause hangover symptoms.”

Drink in moderation

Therefore yes, soon it may be possible to drink wine without waking up with a hangover the next day. However a hangover-proof bottle of wine is unlikely to make it into your cellar anytime soon. For now, it may be best to stick to drinking in moderation!
